Cozy & Healthy Pizza Baking | Hyggelig & Sund Pizza Bagning

Hey sweeties! The last couple of days I've been writing my SRO (a big assignment for the second year of Danish high schools) which also means that I've been home for just a couple of days. So other than doing some insane workouts to procrastinate time, I thought I would do baking as well, cause why not use your wasting time constructive?? 
The biggest reason to why I got the desire to make pizza is because my grandmother gifted me this vegan cookbook called: Vegansk Velvære. She caught me looking in it and asked if I wanted it since she isn't either vegetarian or vegan. So I've really enjoyed looking through this book procrastinating more time. The author is Mia Sommer and she also has a blog about vegan lifestyle worth checking out.


Hej søde! De sidste par dage har jeg skrevet min SRO (en stor opgave i 2.g på et STX gymnasium), hvilket også betyder at jeg har været hjemme bare et par dage. Så udover at lave nogle hårde træninger for at spilde lidt tid, så tænkte jeg, at jeg også ville bage lidt, for hvorfor ikke bruge dine overspringshandlinger på noget produktivt??
Den største grund til at jeg fik lyst til at lave pizza, er fordi min mormor gav mig denne veganske kogebog kaldet: Vegansk Velvære. Hun fangede mig i at kigge i den, og spurgte om jeg ikke ville have den, eftersom hun hverken er vegetar eller veganer. Så jeg har virkelig nydt at kigge igennem denne bog for at spilde noget tid. Forfatteren er Mia Sommer, og hun har også en blog omkring vegansk livsstil, der er værd at checke ud. 





I used about half/half of wheat flour and graham flour (750-800g) since we didn't have more graham flour, but other than that I just followed the recipe with 50g yeast, 5 dl lukewarm water, 2 tbsp vegetable oil, 1 tsp sugar, 2 tsp salt and I just mixed that all together. The recipe says to let it rest for 45 minutes but I made this in morning and ate it about three hours later and that worked out too. Then I just shaped it into a pizza afterwards.


Jeg brugte omkring halvt/halvt af hvedemel og grahamsmel (750-800g) eftersom vi ikke havde mere grahamsmel. Men udover det har jeg fulgt opskriften med 50g gær, 5 dl lunkent vand, 2 spsk vegetabilsk olie, 1 tsk sukker, 2 tsk salt og jeg blandede bare alt sammen. Opskriften siger at den skal stå i 45 minutter, men jeg lavede den om morgenen og spiste den omkring tre timer senere og det fungerede fint. Så jeg formede den bare til en pizza efter.



Since we didn't have any normal potatoes I just tried to used sweet potatoes by slicing them into very thin slices. I also cut some portobello mushrooms and placed on top with a few drizzles of pesto. The best cheese on pizza is without doubt mozzarella, but if you want this to be vegan just leave that out, I bet you know something to put on just as delicious! The book do contain a lot of great ideas for pizza topping as well, worth checking that out.
After topping it I put it into the preheated fan-assisted oven at 200 degrees Celsius for 15 minutes, I made sure the pan I placed my pizza on was hot too.


Eftersom vi ikke havde nogen normale kartofler, prøvede jeg bare at bruge søde kartofler ved at skære dem i meget tynde skiver. Jeg skar også nogle portobello svampe og klattede lidt pesto på. Den bedste ost til pizza er uden tvivl mozzarella, men hvis du gerne vil lave det vegansk kan du bare udelade osten. jeg tør væde med, at du kender noget at smide på som er lige så lækkert! Bogen indeholder også en masse ideer til pizza fyld som er værd at kigge på.
Efter at have toppet den smider jeg den i en varmluftsovn ved 200 grader i 15 minutter, jeg var også sikker på at panden jeg lagde pizzaen på var varm.

Place the potatoes as the first thing, and then the rest of the things to make sure the potatoes get the right texture.


Læg først kartoflerne på og så resten af tingene for at sikre dig at kartoflerne får den rette tekstur.




The waiting time is always the worst, you could do something productive or just waste time on your phone like I usually do ehe...


Ventetiden er altid den værste, du kunne gøre noget produktivt eller bare spilde din tid på din telefon som jeg normalt gøre ehe...


This was seriously delicious! I won't hesitate making this once more, the bottom and edges were crispy and the middle softer, just the way a good pizza should be. The recipe makes about 4 pizzas of this size on the picture. I was skeptic about trying to put sweet potatoes on but that was a huge success, definitely a big recommendation!


Det her var seriøst lækkert! Jeg vil ikke tøve med at lave dette igen, bunden og kanterne var knasende og midten blødere, ligesom en god pizza skal være. Dejen laver ca 4 pizzaer af denne størrelse på billedet. Jeg var skeptisk overfor at prøve med søde kartofler, men det var en stor succes, helt klart en stor anbefaling!
